Vegan Recipes with Garbanzo Beans
Garbanzo Bean and Spinach Stew

This recipe is a hearty and flavorful vegan stew made with garbanzo beans, spinach, and a variety of spices. It’s a great way to get your protein and fiber without sacrificing flavor!
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 (14-ounce) can diced tomatoes
- 1 (14-ounce) can garbanzo beans, drained and rinsed
- 2 cups vegetable broth
- 1 bay leaf
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups fresh spinach
Instructions
1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. 2. Add the cumin, coriander, turmeric, smoked paprika, cinnamon, and cayenne pepper. Stir to combine and cook for 1 minute. 3. Add the tomatoes, garbanzo beans, vegetable broth, bay leaf, salt, and pepper. Bring to a boil, reduce the heat to low, cover, and simmer for 15 minutes. 4. Add the spinach and cook for an additional 5 minutes. 5. Serve warm. Enjoy!
